How to prevent mildew in rice
The mildew of rice is mainly related to temperature and humidity, as well as the amount of bran powder on the surface of the rice, the failure of the heat engine to cool the rice in time, and pests. The microorganisms that cause the grain to remain unchanged mainly include fungi (molds, yeasts, plant pathogenic fungi, etc.), bacteria, viruses, etc. The most likely to cause rice mildew is the mold in the fungus. In the early stage of mildew, the surface of the rice is gray, tarnished, and gray-like, and the rice ditch is obvious. During the mildew process, it is manifested as heat, sweating, and a slight mildew smell; the pigment produced by the mold itself and its metabolism causes the rice to change color, causing the original color of the rice grains to disappear, while it appears black, dark, yellow and other colors. Mildew is significantly related to the water content, ambient temperature When the moisture content is below 12%, it is difficult for molds to multiply. When it is below 14%, the water activity AW value at this time is lower than 0.64, which has a certain inhibitory effect on some mold spores, and most microorganisms cannot multiply. Mold is greatly reduced below 20 ° C, and pest reproduction is completely inhibited below 10 ° C. Mold stops activity.
How to store rice
Rice is processed, which is good for eating but not for storage. It is easy to get worms and mildew under the conditions of high air humidity and high temperature. People are accustomed to exposing wormed rice to the sun, which not only fails to kill rice worms, but also affects the taste due to excessive water loss. Experts suggest that rice should be placed in a dry, cool and ventilated place. For rice that needs to be stored for a period of time, you can put garlic or fennel tied with gauze in the rice or put some dried kelp directly
The relative moisture control of rice in safe summer is 13.8-14%.
The warehouse must have heat insulation and moisture resistance, and be well ventilated.
Warehouse hygiene should be free of dust and dust. (Dust is the best place to breed pests) Keep it clean.
There should be cooling and humidity reduction measures in the warehouse.
There should be a temperature and humidity meter in the warehouse, and there should be temperature detection equipment in the rice stack. Check the temperature and humidity of the warehouse and the temperature of the rice every day. If the humidity in the warehouse is found to be high, it should be dehumidified. If the rice temperature is high, reverse the stack, ventilate and cool down. And form a record.
Regular clearance and disinfection in the warehouse. No pollution sources are allowed.
There should be a support row at the bottom of the stack to prevent moisture, and the rice of different grades and specifications should be strictly separated. Insect-prone foods and rice are not allowed to be in the same warehouse to prevent cross-infection.
What should I do about moldy rice?
When the stored rice appears obscure and tendon, the degree of mildew of the rice is more obvious. At this time, it must be dried and ventilated, and treated in time to prevent continued deterioration. Once the rice is moldy, it cannot be eaten, otherwise it will cause liver damage and human poisoning symptoms.
