Stearoyl CoA is a saturated fatty acid metabolite involved in polyunsaturated fatty acid synthesis and the PPAR signaling pathway. Stearoyl CoA is used to study the specificity and kinetics of stearoyl-CoA desaturase(s) which lead to the formation of monounsaturated fatty acids.
