由棉子饼磨粉水解或甜菜糖蜜制得的一种三糖。由右旋半乳糖、右旋葡萄糖和左旋果糖各一分子组成。白色结晶粉末。从水溶液结晶时带有五分子结晶水。缓缓加热至100℃时失去结晶水。溶于水。极微溶于乙醇。有右旋光性。溶解度:143 g/L水、1g/10ml 甲醇，溶于吡啶，微溶于醇。 供医药、微生物培养基等用。
