来自黑曲霉的淀粉葡萄糖苷酶能够水解低聚糖的α-D-(1-4)、α-D-(1-6)和α-D-(1-3)糖苷键。淀粉葡萄糖苷酶是一种胞外酶，可将淀粉转化成糊精和葡萄糖。该酶在淀粉加工工业中用于由玉米糖浆商业生产D-葡萄糖。产品应用 1、用于糖原测定。 2、淀粉水解用乙酸盐缓冲液。 3、用于全酵母细胞中糖原的测定和葡糖淀粉酶反向合成异寡糖。 4、将糖原水解成葡萄糖单体，以研究骨骼肌中的脂质积累。
