产品介绍

从猪胰腺中分离的α-淀粉酶是一种糖蛋白。它是由约475个残基组成的一条多肽链（包含2个SH基团和4个二硫键）以及一个紧密结合的Ca2+（稳定性所必需的）组成的。 α-淀粉酶水解多糖中三个或更多个α（1→4）连接的α（1→4）葡聚糖键D-葡萄糖单元。α（1→6）键不会水解。天然底物淀粉或糖原可以在一定程度上被低分子量化合物替代。处理说明 α-淀粉酶在25mM盐酸、pH7.5中的溶液，以及含有100mM氯化钾的溶液，在0℃ 或-20℃ 下至少可稳定储存9天。在pH7.3的1mM磷酸盐溶液中30mM氯化钙可在-15℃下储存。产品应用 α-淀粉酶用于水解α-连接的多糖α键，如淀粉和糖原。

生化机理

Endohydrolysis of (1->4)-alpha-D-glucosidic linkages in polysaccharides containing three or more (1->4)-alpha-linked D-glucose units. Cofactor: Protein has several cofactor binding sites: Ca2+. Note: Binds 1 Ca2+ ion per subunit. Chloride. Note: Binds 1 Cl- ion per subunit.
