α-淀粉酶是一种胞外酶，广泛存在于许多动植物中，也分布于微生物中，例如各种芽孢杆菌(Bacillus species)。 α-淀粉酶（1,4-α-d-葡萄糖水解酶），是一种内切葡聚糖酶，属于糖苷水解酶家族 13(GH13)的一员。 α-淀粉酶可将淀粉降解为麦芽糖等寡糖、葡萄糖和α-极限糊精。它可水解由三个或多个α-(1→4)连接D-葡萄糖单元组成的多糖的α-(1→4)葡聚糖键，无需水解α-(1→6) 键。参与葡萄糖生成，对于能量获取至关重要。α-淀粉酶是一种广为人知的工业酶，适用于食品、洗涤、纺织、发酵和制药行业。处理说明在pH 6.9 的50 mM磷酸钠中制备该产品的1 mg/mL储备液。产品应用作为唾液组分，用于人工咀嚼；胃肠腔消化实验作为十二烷基硫酸钠-聚丙烯酰胺凝胶电泳(SDS-PAGE)的标准品，测定α-淀粉酶浓度  对乙醇不溶物(AIR)脱淀粉，进行非纤维素神经单糖分析
