糜蛋白酶又称胰凝乳蛋白酶，是一种蛋白水解酶，它能优先水解L-酪氨酸和L-苯丙氨酸的羧基所形成的肽键。酶作用最优化的PH值为8.0～9.0。糜蛋白酶活性能被重金属和天然胰蛋白酶抑制剂不同程度地抑制。白色或类白色结晶状。分子量约25 kDa。 Enzyme Commission (EC) Number: 3.4.21.1 一种丝氨酸蛋白酶，水解肽键的羧基端带有芳香或长疏水链(Tyr, Trp, Phe, Met)的肽键。备注：用于没有外源胰蛋白酶活性存在条件下的蛋白质水解。
