纤维素酶是水解纤维素的酶，是由 β-1,4-糖苷键，与葡萄糖连接。内切-β-葡聚糖酶是纤维素酶复合体的主要组成酶之一。通过随机裂解分子内的糖残基来催化纤维素水解。外切-β-D-葡聚糖酶和 β-葡萄糖苷酶可协同作用将纤维素转化为葡萄糖，因此可用于工业规模生产。处理说明通过转基因曲霉菌微生物的深层发酵生产，直接使用。产品应用 1、在 BBC（生物可吸收细菌纤维素）生物降解性分析期间，已用于将纤维寡糖降解为葡萄糖。 2、这种酶还被用于光子相关光谱，以研究其对未过滤啤酒样品的影响。该光谱分析中评价的参数为悬浮颗粒的大小、流速和混浊稳定性。
