无花果蛋白酶（Ficin）被归类为硫醇蛋白酶。由无花果 (Ficus sp.)树的胶乳和不成熟的果实乳汁用pH值4.0的水进行抽提，在乙二胺四乙酸(EDTA)存在下用硫酸铵进行盐析(二次)，再用食盐盐析二次而成。得率约11%。一个绿的重10～15g的无花果，可含有100～150mg商业性无花果蛋白酶。经阳光干燥后仅存活力约12%，100℃烘干的果实已无活性。使用效果： 1.降低麦汁粘度和浊度，提高过滤速度。 2.水解纤维素、半纤维素，破碎大麦细胞壁，充分释放胞内物质，提高麦汁得率。 3.加强蛋白质的分解转化，增加氨基酸含量。 4.阻断部分双乙酰生成途径，减少酒中双乙酰含量，缩短发酵时间，提高酒品质量。 5.用于发酵时，有助清酒过滤，提高酒品的非生物稳定性，延长保质期。在PH值7.0、温度37±0.2℃条件下，每分钟水解酪蛋白释出的可溶物在275nm波长吸光度与1微克酪氨酸的吸光度相当时，所需的酶量即为一个活力单位，用u表示。产品应用：无花果蛋白酶为酶制剂。无花果蛋白酶用于啤酒抗寒（水解啤酒中的蛋白质，避免冷藏后引起的浑浊）；肉类软化（水解肌肉蛋白质和胶原蛋白，使肉类嫩化）；焙烤时的面团调节剂；干酪制造时的乳液凝固剂（代替凝乳酶）。
