瓜儿胶,由豆科植物瓜儿豆(Cyamopsis tetragonolobus)的胚乳经碾磨加工而成。为大分子天然亲水胶体，主要由半乳糖和甘露糖聚合而成；属于天然半乳甘露聚糖，几乎无味。能溶于冷水或热水中形成溶胶，天然溶液 pH在 6-8之间；瓜尔豆从瓜尔豆种子中提取而来。它包括半乳甘露聚糖的多糖。瓜尔豆用于染料溶液增稠、纸张生产以及用作水基泥浆炸药的主要胶凝剂。它可用作纤维去絮凝剂和干强剂，还可用作炸药的阻水添加剂。瓜尔豆在食品中可用作稳定剂、乳化剂和增稠剂。它能够降低胆固醇和血糖水平。瓜尔豆有助于减肥和预防肥胖用途：维持体外淀粉消化分析期间的黏性减少琼脂糖凝胶的稀释率研究其在微电极阵列(MEA)上建立3D类神经网络的作用
