米曲霉脂肪酶是一种羧酸酯酶[1]，属于α/β-水解酶家族。它包含一个盖子结构域（lid domain）、铰链结构域（hinge domain）和一个催化三分子Ser?His?Asp/Glu。其三维结构是与酯酶非常相似的α/β水解酶折叠。密度：1.2 应用：来自米曲霉的脂肪酶已被用于：三酰甘油 (TAG) 的部分消化；蓖麻油中（12-蓖麻油酰基蓖麻油酰基）二蓖麻油酰基甘油（RRRR）的消化；亚麻籽油的水解 Aspergillus oryzae lipase is a carboxylesterase and belongs to the α/β-hydrolase family. It comprises a lid domain, hinge domain and a catalytic triad SerHisAsp/Glu. The three-dimensional structure is a α/β hydrolase fold which is very similar as that of esterase enzyme. Lipase from Aspergillus oryzae has been used: • in the partial digestion of triacylglycerols (TAG) • in the digestion of (12-ricinoleoylricinoleoyl)diricinoleoylglycerol (RRRR) present in castor oil • in the hydrolysis of linseed oil
