脂氧合酶(LOX)是非血红素铁蛋白。在植物、部分微生物合动物中广泛存在。根据pH值和最适温度、底物特异性以及不同试剂的抑制程度，分为LOX-1、LOX-2和LOX-3。应用：来自大豆的脂氧合酶已用于：1）研究2-(α-D-吡喃葡萄糖基)甲基-2,5,7,8-四甲基色胺-6-醇(TMG)对脂蛋白氧化的影响；2）作为脂氧合酶的代表酶，在微孔板检测平台上筛选木材提取物降解酶；3）作为脂氧合酶抑制活性检测的阳性对照品。大豆酶将使用花生四烯酸作为底物，以亚油酸作为底物的活性约为 15%；花生四烯酸氧化的产物是 12-或 15-过氧化氢花生四烯酸（12-HPETE 或 15-HPETE）。

生化机理

在接近100℃的温度下热处理5到10分钟，使脂氧合酶失活。研究表明，γ辐射处理降低了大豆脂氧合酶的比活性。这类酶可用于与哮喘和过敏相关的研究。脂氧合酶适用于工业生物转化，如芳香精细化学品的生产。催化含有顺式，顺式-1,4-戊二烯结构的脂质的氢过氧化。
