脂质（Lipid）是中性脂肪、类脂及其衍生物的总称，其共同的物理特性是不溶于水，易溶于有机溶剂（如乙醇、乙醚等）。人体的脂肪主要有两种：1、储存脂肪，如中性脂肪，主要分布于皮下、肾、胰腺等部位。2、结构脂肪，如类脂（磷脂、糖脂、胆固醇等），主要分布于细胞内。中性脂肪（Neutralfat）是由三分子脂肪酸和一分子甘油组成的脂类，呈中性。中性脂肪是储存能量的方式之一，在氧化时释放出能量。中性脂肪染色经常采用苏丹Ⅱ、苏丹Ⅲ、苏丹Ⅳ、苏丹黑B、油红O法等。组织内的中性脂肪在某些疾病过程中被水解而游离出脂肪酸，在组织切片内检测出脂肪酸，有利于了解某些病变，可利用硫酸耐尔蓝染色观察。耐尔蓝染色液（Cain法）又称硫酸耐尔蓝染色液，可以鉴别组织内的中性脂肪和酸性脂肪（脂肪酸或磷脂等），如用于动脉粥样硬化灶、急性出血性胰腺炎的脂肪坏死时，该染色液可区分两种脂类。脂肪组织内出现酸性脂肪，即表示有中性脂肪分解。 N774550
