果胶酶是一种优良的曲霉菌株，经液体深层发酵和现代生物后提取技术而制备的高活力果胶酶制剂。其中含有一定的半纤维素酶、纤维素酶和聚糖酶。用途：黑曲霉来源果胶酶可用于：原生质体释放原生质体酶混合物，进行酶解糖的部分糖化研究其在植物病原菌入侵植物组织、农产品变质、各种食品加工和植物生物技术应用中的作用用于植物原生质体制备，在细胞器分离前消化细胞壁。生化/生理作用：从黑曲霉中选定菌株生成的果胶酶制剂：主要含有果胶转移酶、多聚半乳糖醛酸酶和果胶酯酶以及少量的半纤维素酶和纤维素酶。果胶酶水解果胶，果胶是细胞壁的一个组成部分。它们可能攻击甲基酯化果胶或去酯化果胶。它是果胶酶活性的来源，还含有纤维素酶和半纤维素酶活性。果胶酶催化果胶和其他半乳糖醛酸中的a-（1-4）-Dgalactosiduronic键的随机水解。 Usually used in plant protoplast preparation to digest cell wall prior to organelle isolation.

生化机理

Involved in maceration and soft-rotting of plant tissue. Hydrolyzes the 1,4-alpha glycosidic bonds of de-esterified pectate in the smooth region of the plant cell wall.
