黄色粘稠液体，不溶于冷水和乙醇，可溶于热的油脂，为非离子油包水(W/O)型乳化剂。特性及应用：无不良气味，具有良好的热稳定性。 (1)用于巧克力，少量添加即可显著提高巧克力制品的流动性，节省可可脂用量。 (2)加快巧克力及其制品充填铸模过程，优化工艺流程，并使其中产生的小气泡易于排出，避免了产品出现空洞及气孔现象。 (3)与卵磷脂混合使用，具有良好的协同效应，可减薄巧克力涂层的厚度，提高易加工性， (4)在潮湿条件下可降低粘滞性。使冰淇淋的巧克力糖衣迅速形成。并加速其粘连性，增加附着力，减少微小气孔。 (5)使油状脂肪乳化制品均一、稳定，提高了油脂的功能性。
