说明 Promozyme D2 符合联合国粮农组织（FAO）/世界卫生组织（WHO）食品添加剂联合专家委员会（JECFA）及美国食品化学品法典（FCC）有关食品级酶制剂的纯度规定。应用高麦芽糖浆（VHM-70）是通过用β-淀粉酶（从大麦、小麦或大豆中获得）加上普鲁兰酶 Promozyme D2 进一步水解液化淀粉来生产。为了获得较高含量的麦芽糖和相对较低的葡萄糖，液化淀粉的 DE 值越低越好。 Pullulanase is a glucanase that degrades pullulan. It is produced by the Gram-negative bacterium Klebsiella and is used for starch-debranching as well as to study polysaccharide utilization.

生化机理

I 型纤维素酶专门水解 α-1,6 连接，而 II 型纤维素酶也能水解 α-1,4 连接。
