It has been used to conduct partial saccharification of sugars. Pectinases are used to study their role in the invasion of plant tissues by phytopathogens, the spoilage of produce and various food processing and plant biotechnology applications.

生化机理

果胶酶是由筛选的棘孢曲霉菌株产生的活性果胶酶制剂，其主要包含果胶酰胺酶、多聚半乳糖醛酸酶和果胶酯酶，以及少量半纤维素酶和纤维素酶。果胶酶水解果胶，果胶是细胞壁的组成部分。它们可能攻击甲基酯化的果胶或脱酯化的果胶。它是果胶酶活性的来源，也含有纤维素酶和半纤维素酶活性。
