无气味。微有甜味。有吸湿性。与水合茚三酮反应呈黄色，被冰乙酸酸化后则显红色。易溶于水和乙醇，不溶于乙醚、丁醇和异丙醇，溶于无机酸。。水中溶解度：1623g/L (25°C)，乙醇溶解度: 67g/100mL (19°C)。产品应用：L-脯氨酸已被用作高糖--Dulbecco′s改良Eagle′s培养基(HG-DMEM)的一个组份，用于软骨细胞分化和软骨细胞样细胞的培养。它也被用作酵母培养中酵母氮基的组成部分。
