木聚糖（xylan）为多聚五碳糖，是半纤维素的一种，广泛存在于植物细胞壁中，是自然界含量仅次于纤维素的碳水化合物。木聚糖的结构单元是木糖，通过木糖苷键连接的木糖长链成为主链，在主链上部分基团被侧链基团取代，这些侧链基团有乙酰基、阿拉伯糖基、半乳糖基、葡萄糖醛酸基、香豆酸、阿魏酸等，木聚糖再通过侧链基团与植物的其余成分如纤维素、木质素、果胶相连接形成致密的结构，共同构成了植物体的支持骨架。
