胰蛋白酶原是一种酶原（酶原），被激活形成胰蛋白酶。它在胰腺中合成，一旦到达小肠腔，就会被肠激酶激活。牛胰蛋白酶原是由229个氨基酸组成的单条多肽链，由6个二硫键交联。肠激酶在Lys6-Ile7肽键处从胰蛋白酶原的NH2末端切割六肽并激活它。这样形成的胰蛋白酶自动催化激活更多的胰蛋白酶原到胰蛋白酶。这种天然形式的胰蛋白酶称为β-胰蛋白酶，它在Lys131-Ser132处发生自溶，导致α-胰蛋白酶通过二硫键结合在一起。胰蛋白酶是一种丝氨酸蛋白酶，活性位点有His46和Ser183。胰蛋白酶的最适pH值为7-9。处理说明该蛋白可溶于水（10mg/ml）。胰蛋白酶原溶液在酸性缓冲液（pH2-4）中稳定，而在中性缓冲液中发生自催化激活为胰蛋白酶。产品应用牛胰腺胰蛋白酶原适用于以下用途：用单程衰减全反射傅里叶变换红外显微镜分析H2O溶液中的蛋白质二级结构电喷雾电离四极飞行时间质谱仪的调谐与校准利用红外光谱分析蛋白质的二级结构 SDS-PAGE作为分子量标准（24kDa）注：一个BAEE单元等于每分钟0.001的ΔA253，在pH7.6、25°C和反应体积为3.2毫升（1厘米光程）的条件下，BAEE作为底物。
