来自牛奶的酪蛋白是一种磷蛋白。酪蛋白有四种主要类型，占牛奶中总蛋白质的约80％：α-s1 酪蛋白、α-s2 酪蛋白、β-酪蛋白和κ-酪蛋白。酪蛋白被认为是牛奶中的主要保护成分。此规格含有70%以上α-s2 酪蛋白。处理说明复溶后，等分并冷冻保存（-20℃）。储备溶液在-20°C下可稳定保存至多3个月。产品应用来自牛乳的α-酪蛋白是一种免疫球蛋白 E (IgE) 结合表位，属于酪蛋白磷蛋白家族。由于α- 酪蛋白抗体与胰岛素的强烈交叉反应性，它已用于儿童胰岛素依赖型糖尿病 (IDDM) 的研究。对儿童表现 (IDDM) 的研究显示，与对照兄弟姐妹相比，α-酪蛋白抗体水平更高，这可能作为 IDDM 的风险标志物。

生化机理

Alpha-S2-casein: Important role in the capacity of milk to transport calcium phosphate. Casocidin-I inhibits the growth of E.coli and S.carnosus.
