How to wash the rice correctly?
Rice should not be soaked too much, because rice contains some vitamins and inorganic salts that dissolve in water, and a large part of it is in the outer layer of the rice grains. If it is soaked for a long time before washing, a large part of the inorganic salts and soluble vitamins in the rice grains will be dissolved in water, and then the loss will be greater after washing.
During the rice washing process, the loss rate of thiamine can reach 40% -60%, riboflavin and niacin can reach 23% -25%, and protein, fat, sugar, etc. will also be lost to varying degrees. In addition, rice is easy to crush after soaking for a long time. Therefore, the following points should be noted when washing rice:
1. Wash with cold water, do not wash with running water or hot water.
2. Water consumption and washing times should be minimized to remove sediment.
3. Do not scrub hard and stir excessively.
4. The rice should not be soaked before and after washing. If it has been soaked after washing, the soaked rice water and the rice should be put into the pot together.
